Customers have the option to express their appreciation for service by adding a gratuity or tip to their bill. These contributions, made through varied payment methods, serve as a meaningful supplement to the income of hospitality workers. Despite the seemingly straightforward nature of this concept, nuances exist in distinguishing between tips, gratuities, and service charges, as well as in the methods employed by businesses to handle them. It is crucial for hospitality operators to comprehend these differences and effectively manage and distribute these contributions equitably. Equally, customers benefit from understanding how their contributions are used.

What are tips?

A tip is a voluntary payment from a customer to a member of staff, or to a team, to show appreciation for good service. It is often a percentage of the bill and can be given in cash, added to a card payment or paid through an app. The customer decides whether to give one and how much.

What is a gratuity?

Gratuity is another word for a tip. In practice, people often say “tips and gratuities” together, and the law treats tips, gratuities and service charges in similar ways, which is why we cover all three on this page.

What is a service charge?

A service charge is an amount the business adds to the customer's bill, usually as a percentage. There are two types:

  • Mandatory service charge: added automatically, and the customer must pay it.

  • Discretionary (optional) service charge: the customer can ask for it to be removed or changed.

  •

Either way, the business must handle it transparently. In England, Scotland and Wales, the Employment (Allocation of Tips) Act 2023 requires employers to pass service charges on to workers in full and allocate them fairly. Read our Employer Compliance Guide.
